Woody Stems


As a frost-hardy perennial, older thyme stems tend to get tough and woody. When selecting stems to harvest, look for light yellow colored centers with bright green leaves. Pinch just before a "growth node", or a place towards the bottom of the stem where new stems are growing out on either side of the stem.
